Anything with a K or X at the end of the version number (EX: 2600K, or 980X) because it is unlocked already and can add turbo overclocking without a problem of overheating or damage (but to be safe, get a good heatsink or liquid cooling system) unless used excessively though I doubt you would for say a 980 or a 990X which both have an LGA 1366 Chipset.

Just remember that GHz isn't everything in a CPU. The L2 and L3 cache are very, very important but is missed a lot even by some enthusiasts.

Hence why I like Intel over AMD. I don't want a pseudo 8-core BS sell out scheme when Intel's been hyperthreading i7s since LGA 1155.

Agreed, I also stick to Intel, but the 3960x offers better cache sizes also. I would call myself an enthusiast but by no means an expert, i just like computers and like to keep up-to-date on the newest and best stuff out there. The improvement over the 2600k is relatively minimal (depending on the benchmarks used) and the price difference is pretty insane, the 3960x is still the better cpu. I don't believe there are any real negatives to moving to the 2011 socket except of course the price. I just wish i had that kind of money to throw around :P

The 3960x is not the only LGA 2011. There's another 6 core and a 4 core that have threads to double it and GHz stock clocked higher than the 2600k with more L2 and L3 but are more expensive. I would love to have one of those with a ASUS Rampage IV and Dual-SLI NVIDIA GTX 580s....a girl can dream though.
